Summer foods can be fabulously light and delicious. 

Do we need those heavy, dense meals when the sun is shining? Making a few nutritional swaps could make all the difference to your summer waistline and also the health of the whole family.

5 summer super swaps

  • Snack on strawberries instead of dried fruit, with only 28 kcal per 100g and packed full of vitamin C; a summer staple.
  • Include some healthy fats at mealtimes, such as olive oil on your salad leaves, avocado, nuts and seeds or some oily fish. Maybe sardines or salmon, all rich in omegas with cholesterol fighting properties.
  • British peas, raw or steamed, mixed through a salad or served on the side. Packed with B vitamins for a healthy metabolism.
  • Don’t get stuck in a salad rut, experiment with our heart-healthy beetroot salad (see recipe below), super nutritious and easy to make.

Beetroot & Orange Salad

1 pack cooked beetroot, drained
2 medium oranges
Rocket leaves

For the dressing:
1 tbsp orange juice
2 tbsp olive oil
1 tsp wholegrain mustard
1 tsp honey
1 tbsp white wine vinegar
Salt and pepper

Method

  • Cut the cooked beetroot into slices and place in a mixing bowl.
  • Using a sharp knife cut off the orange peel and cut into segments. Try to remove all pith while preparing the oranges. Place the oranges with the beetroot.
  • Whisk together all the dressing ingredients and check the seasoning.
  • Gently mix the dressing into the salad.
  • Chill until served.
  • To serve, toss with rocket (or your favourite) leaves.
  • This salad will keep for up two days sealed and refrigerated.
