This veggie packed soup made using Del Monte Tomato Juice is a tasty and healthy way to warm up during the winter months.
Time: 45 Minutes
Gather the ingredients.
Preheat oven to 200c. Place the peppers and tomatoes on a baking tray, add a splash of oil and roast for 30 minutes.
Whilst the tomatoes and peppers are roasting add the knob of butter to a pan, with the leeks and celery. Sauté for 5 minutes.
Add in the Del Monte tomato juice and simmer for 15 minutes.
When the roast vegetables are done add them to the pan and blend all of the ingredients.
Simmer to a comfortable eating temperate, add a teaspoon of sugar if the tomatoes used are too tart for your taste. Season and serve.
